In this interview with acadman.in Siddharth Pandey, alumni of IHM Hyderabad has shared his experiences. Enjoy reading!

How would you like to introduce yourself to our readers?

My name is Siddharth Pandey a boy from Delhi, alumni of IHM Hyderabad, people call me  by the name SCHNEIDER  in the college, a passionate chef working as management trainee in TAJ who is a believer that a person should put his head down and work hard and never wait for things to happen but make them happen yourself through handwork and never give up attitude. I believe that cooking is about passion and it may look slightly temperamental in a way that it’s too assertive to a naked eye and unless you can identify what you are tasting, you cannot cook it. So when you enter into the kitchen blindfold yourself and taste and identify the dishes and the ingredients used in it. The most important lesson I learned that you should not ever stop learning.

How was your life at IHM Hyderabad?

My life turned around in IHM HYDERABAD. I was a bright student from the school days only. From an immature rugged boy who does not know how to deal with the world entering into the life what he wanted. Since 8th standard only it was clear in my mind what to do but I do not know how to do things. I gave my entrance and got IHM HYDERABAD where I was groomed. My life took a turn when I was in 2nd year. There was an announcement regarding national competition by the name SKILL INDIA  organized by THE MINISTRY OF SKILL AND ENTREPRENEURSHIP and the winners will represent  TEAM INDIA in WORLD SKILLS to be held in  ABU DHABI. There were 4 rounds and I qualified first and second round and in the third round in Delhi, all the participants had to cook a main course with the given ingredients on the spot. I made gourmet style cottage cheese Panini sandwich with smoked eggplant sauce, baked mash potato, and carrot allumette. I won the regional round. I was called for the nationals at PRAGATI MAIDAN and I was announced the winner of SKILL INDIA  by the honorable minister MR.RAJIV PRATAP RUDY. This was a turning point and after that, I never looked back, I won much competition like NESTLE INDIA 2016, ALL INDIA CHEF COMP 2016 and much more. All the faculty supported us and this is the result of all the hard work and team efforts put in by us and our faculties. Due to these efforts only I got  MANAGEMENT TRAINEE in TAJ AND MARRIOTT INTERNATIONAL. IHM Hyderabad and my principal MR.SANJAY KUMAR THAKUR played a major role n building my career.

How was your Industrial Training experience?

I did my training from WESTIN HOTELS AND RESORTS, GURGAON AND SOHNA both. I simply enjoyed my training and learned from each person around me. There is always a scope of learning whenever you want to learn. During the training, here were hard ships as well but with all hard work and family supported I completed my training with appreciation in FOOD AND BEVERAGE DEPARTMENT.

Please educate us about the whole process of cracking the MT?

Management Trainee  has an excellent opportunity for you to get the best jobs in across india. Working in this company will prove pivotal in your career advancement. Jobs in Management Trainee will allow you to exhibit your talent and grow even faster. These jobs give you the chance to have the greatest exposure and to work among the best people around you. Don’t let this opportunity go. Openings in Management Trainee jobs is a chance to get into a company, which nurtures you in a way where you will become highly competent and learn a lot in quick time. Management Trainee jobs also expose you to highly talented people and cutting edge technologies which bring the best out in you.

There are around 5-6 rounds on college level and one or two rounds on regional level and final two rounds in the corporate office of the company. One must know that for which department he/ she is giving the interview. Knowledge and the process of presenting that knowledge is very important. Knowledge without communication and understanding is a waste. It is similar to cooking your best dish and presenting in a way that it doesn’t look appealing.

I cook , I create, I am excited by what  I do , I have still got a lot to achieve, in short I hid myself in food. I suppose your security is your success and the key to your success is your fine palate and when you cook under pressure you trade perfection.

What kind of skills are required to crack MT?

  1. PASSION
  2. GOOD SENSE OF HOMOUR
  3. SPONTENOUSNESS
  4. SMARTWORK
  5. PRACTICAL AND THEORATICAL KNOWLEDGE ( SOUND KNOWLEDGE OF ALL DEPARTMENT )
  6. PRACTICE TO PERFCT YOUR TRADE AND BE A PROBLEMSOLVER
  7. FUTURISTIC YET SHOULD BE UPDATED WITH CURRENT NEWS ND
  8. ONE SHOULD ROAM AROUND LIKE A GHOST IN THE CORRIDORS AFTER 12 WITH THEORY OF COOKERY TILL EACH WORD IS LEARNED BY YOU
  9. KEEP IT SIMPLE YET ELEGANT ( YOUR PERSONALITY AND YOUR KNOWLWDGE )

I do not like looking back. I am always looking forward, I am not the one to sit and cry for the split milk. I am too busy looking for the next cow.

What are your responsibilities at Taj Hotel?

TAJ GROUP OF HOTEL’S  MT PROGRAMME IS called HOTELIER’S DEVELOPMENT PROGRAM. All the management trainees will be trained at different locations of TAJ during the tenure of 2 years and after that all of them will be appointed  at ther respective designation as per the departments. I will be appointed as JUNIOR SOUS CHEF in TAJ GROUP OF HOTELS.

What would be your message to young students of the industry?

  • IF YOU WANT TO BE A GREAT CHEF YOU HAVE TO WORK WITH GREAT CHEFS AND THAT IS EXACTLY WHAT I DID.
  • COOKING ABOUT PASSION IN YOU, IT IS YOUR IMAGINATION ON PLATE NOTHING ELSE
  • THE MOMENT YOU COMPROMISING WITH YOUR INGREDIENTS THE GAME IS LOST.
  • YOU DON’T COME NTO COOKING TO GET RICH
  • NEVER STOP LEARNING AND PUT YOUR LIMITS TO THE ABSOLUTE EXTREME
  • HOWEVER HOW AMAZING A DISH LOOKS IT IS ALWAYS THE TASTE THAT LINGERS IN YOUR MEMORY
  • INITIALLY LET YOU FOOD DO THE TALKING, YOU WILL BE SURPRISED THAT HOW FAR YOU GO IN SHORT PERIOD OF TIME
  • BEING A CHEF IS THE BEST JOB IN THE WORLD
